Flavor Profile: Nose: Elegantly floral with hints of berries, tamarind, cashew, and cinnamon. Palate: Baked butter cookies, fudge, hints of spices (cinnamon, clove), and slightly herbal. Finish: Toffee, nutty, and long lasting floral notes.
STORY: To’ak’s most floral Chocolate edition. The 2018 growing season also registered fewer sunlight hours than any previous years. But fortunately, the rains were consistent. The relatively dry weather during the post-veraison phase often has the effect of increasing the polyphenolic content of the cacao beans. We believe this is partially responsible for the strong floral aromas of this particular edition. We accentuated these floral notes by using a mild roast and minimizing the conching temperature and duration. The result is the flower-forward chocolate bar that we’ve been pursuing for a few years.
PAIRING RECOMMENDATIONS: Complementary flavors abound with sweet and fortified wines like Islay's peaty whiskies or approachable Irish varieties, as well as smooth bourbons and ryes. Additionally, Anejo tequila and Zacapa 23 Rum pair nicely with this Rain Harvest 2018. Soft or semi-soft cheeses, such as Brie or triple cremes, make excellent accompaniments.
