PROFILE: Nose: Touch of vanilla intermingled with floral elements. Palate: Toffee and nuts, creamy berries on the midpalate, wine cellar and a touch of wood on the backend, hint of floral throughout. Finish: Deglet Noor dates, nutty, vegetal
STORY: An ex-rum cask initially from Flor de Caña, one of the most renowned rum distilleries in the world. Subsequently used to age Ecuadorian aguardiente for twenty years by our friends at Zhumir. Last but not least, we filled it up with To’ak chocolate. A lot of history here. This is the Early Release. Creamy and nutty with dark fruits.
PAIRING RECOMMENDATIONS: Flor de Caña and other aged rums are the most obvious choice, but any spirit with vanilla and caramel notes will work just fine (añejo tequila, Irish whisky, Blanton's). Nutty cheeses, soft and semi-soft, are excellent.
