PROFILE: Nose: Chocolatey pineapple. Palate: Pineapple, lemon, green tea, fudge. Finish: Tropical fruits and toffee.
STORY: Winner of the prestigious World Whisky Awards, Sullivans Cove is a rising star in the world of whisky. Our 2018 harvest was aged in an ex-Chardonnay cask that Sullivan's Cove used to age its whisky. Tropical fruits pervade, with a delicate undertone of whisky. A lovely Tasmanian-Ecuadorian creation.
PAIRING RECOMMENDATIONS: Your first and best option is a bottle of Sullivans Cove whisky, if you’re lucky. Single malts from Speyside, triple-distilled whisky from Ireland, bourbon, or cognac are excellent backup options. A sweet dessert wine like Sauternes can also be lovely. For cheese, opt for Brie, Gouda, triple-cremes, Pyrenees sheep’s milk cheese, or Alpine-style cheeses. In other words, creamy and/or nutty cheeses, but nothing overly pungent.
