PROFILE: Nose: Blackberry marmalade with a floral touch. Palate: Burst of berries, floral honey, nutty caramel. Finish: Berries, almonds, tinge of grapefruit.
STORY: On the tails of one of the strangest years ever, the 2021 growing season was relatively normal…until the final months. Heavy rains during ripening and harvest, combined with a moderate conch, gives rise to a fruit-forward bar of To'ak chocolate—blackberry marmalade, nutty caramel.
PAIRING RECOMMENDATIONS: Sweet single malts from Speyside, triple-distilled Irish whisky, well-aged bourbon, VSOP Cognac, reposado or anejo Tequila, Zacapa 21 Rum, and sweet dessert wines like Port or Sauternes. In the realm of cheese, creamy and nutty are always best. Robiola, brie, and triple-cremes are lovely. We also enjoy semi-soft cheeses like gouda, havarti, and fontina.
