STORY: The year 2014 marked the beginning of our experimentation with aging dark chocolate with a range of different casks, Ecuadorian wood vessels, and other aromatic containers. For the first time ever, we offer a complete sampling of our favorite aged editions, ranging from Andean Alder to Spanish Elm.
PAIRING RECOMMENDATIONS: Most good bottles of whisky pair well with most editions of To’ak chocolate. Zacapa 23 rum is our all-time favorite. Properly aged Cognac and Tequila also pair beautifully. Dessert wines like Sauternes and sweet fortified wines like Port work very well. In the realm of cheese, opt for something creamy or nutty and not overly pungent. We recommend triple-cremes, mild brie, gouda, Pyrenees sheep’s milk cheese, and Alpine-style cheeses.
