STORY: On the tails of one of the strangest years ever, the 2021 growing season was relatively normal…until the final months. Heavy rains during ripening and harvest, combined with a moderate conch, gives rise to a fruit-forward bar of To'ak chocolate—blackberry marmalade, nutty caramel.
PAIRING RECOMMENDATIONS: Sweet single malts and spirits. In the realm of cheese, creamy and nutty are always best. Robiola, brie, and triple-cremes are lovely. We also enjoy semi-soft cheeses like gouda, havarti, and fontina.
